Ingredients


- ½ fennel bulb, finely sliced
- ¼ ripe tomato, finely chopped
- 2 tbsp olive oil
- ½ lemon, zest and juice
- handful mixed fresh herbs, such as chives, chervil, parsley and basil, chopped
- salt and freshly ground black pepper


Method

1. Place all of the ingredients into a large salad bowl and stir.
2. To serve, place onto a serving dish.
